Chef Shawn McClain and Partners Open Contemporary
American Restaurant in Site of Former Bathhouse
(Chicago) - One of the most anticipated restaurants to date, Spring Restaurant, located at 2039 West North Avenue at the nexus of the eclectic Wicker Park and Bucktown neighborhoods, opened to the public in June 2001. Executive Chef and Partner Shawn McClain brings his subtly refined cuisine to a space that once housed one of Chicago's most storied bathhouses, the North Avenue Bathhouse. "With Spring, my partners and I are hoping to bring a new experience to the neighborhood, blending "urban" cuisine in a Zen-inspired setting," states McClain.
McClain spent seven years as Chef / Partner at Evanston's (IL) elegant four-star Trio, he built a reputation for innovative cuisine showcased in artful presentations. At Spring, he will continue to focus on seafood, and carry on his exploration into Asian, predominantly Japanese, influences. "I like the sense of balance of Eastern cuisine, the relationship of flavors, and I try to work that into each dish I prepare" says McClain.
